白蘿蔔煲 x 冬日暖意

2020年 | 自從我食素開始,就很喜歡白蘿蔔。它不僅常見於車仔麵和打邊爐,更為我在許多與朋友進餐的肉食餐廳裡解決煩惱。

有一次,白蘿蔔亦出奇地連繫了我和我的堂妹。長大時,我們的交流都只停留在過時過節見面時寒暄兩句的層面。去年農曆新年打邊爐時,全部白蘿蔔都由我們兩個包辦。留意到這一點時,我倆相顧而笑,手執筷子,口裡享受著滋味,原來大家都那麼喜歡白蘿蔔。

份量: 4

所需時間:45 分鐘

材料:

白蘿蔔 1 磅(約450克;切塊)
薑 1-2 片
水 1 1/4 杯
純素蠔油 1 湯匙
鹽 1/2 茶匙
糖 1/2 茶匙
白胡椒粉 1/4 茶匙
蔥 1 根(切粒)

步驟:

  1. 在煲中加入薑、水、純素蠔油、鹽、糖以及白胡椒粉,攪拌均勻。放入白蘿蔔。

  2. 把煲蓋上,煮沸,調慢火。煮20分鐘,直到白蘿蔔開始軟身,不時攪拌一下。

  3. 上碟後,灑上蔥,拌勻即成。

Boiled Daikon Radish x Wintry Comfort

2020 | Ever since I stopped eating meat, I’ve found a deep appreciation for radish. It is a life saver in cart noodles, hot pot, and makes so many shared meals with friends possible in otherwise meat-eating restaurants. 

Boiled radish also created an unexpected moment of connection for me and my cousin. Growing up, we never quite went beyond regular niceties in family meals over festivals. Last Lunar New Year, we found ourselves eating all the radish from the hot pot. When we realised we were the only two people who seemed to enjoy it so much, we looked at each other and laughed simultaneously as we hovered over the pot, chopsticks in hand, radish in mouth.

Serves: 4

Total cooking time: 45 mins

Ingredients:

1 pound daikon radish (about 450g), chopped into bite-sized pieces
1-2 slices ginger
1 1/4 cup water
1 tbsp vegan oyster sauce
1/2 tsp salt
1/4 tsp sugar
1/4 tsp ground white pepper
1 green onion, chopped

Steps:

  1. In a pot, add the ginger, water, vegan oyster sauce, salt, sugar, and ground white pepper. Stir to combine. Add the daikon.

  2. Cover and bring everything to a boil, then reduce the heat. Cook for 20 minutes until the daikon is fork tender, stirring occasionally.

  3. Right before serving, add the chopped green onion. Mix well and serve.
