腐乳卡邦尼韓式年糕 x 尋找創意空間

2020年 | 我喜歡煮飯,但因為放工後經常太累,所以較少下廚。直到最近因疫情而多了時間在家,才再次開始烹飪,探索各種食材,試試各樣煮法。

某天,我正在思考如何可以用上那盒純素忌廉,突然想起我曾吃過腐乳卡邦尼拉(carbonara)。那次的醬汁全是用腐乳製的,所以較鹹。於是我試做自己版本的carbonara,用了韓式年糕(尤其喜歡它厚實而彈牙的口感!),效果十分理想。:)

份量: 3

所需時間:30-45 分鐘

材料:

素火腿 適量
蘑菇 適量
洋蔥 適量
韓式年糕 一包
Orasi純素忌廉 一盒
腐乳 4-5 磚

步驟:

  1. 切好洋蔥和蘑菇。

  2. 將年糕放入熱水中淥熟。

  3. 炒香洋蔥。加入蘑菇和火腿略炒,差不多熟時加入大半盒忌廉。

  4. 將餘下的忌廉倒入預先樁/搗過的腐乳並攪勻,加入鑊裡煮。

  5. 加入年糕兜勻,完成 😉

【備註】

  •  如不夠鹹可以落少許鹽或者多一磚腐乳

  • 可以用普通忌廉

Fermented Tofu Tteokbokki Carbonara x Finding Room for Creativity

2020 | I love cooking but hadn’t been cooking a lot because I’m often too tired after work. Not until recently have I been able to pick up cooking again because of COVID-19. I began to explore different ingredients and play around with different cooking methods.

One day I was thinking about how to use my carton of vegan cream, and suddenly remembered that I’d had fermented tofu carbonara before. That one was a bit salty since the sauce was entirely made of fermented tofu. So I tried making my own version of carbonara dish, but using tteokbokki instead (we like that chewy texture!) and it ended up working quite well. :)

Serves: 4

Total cooking time: 30-45 minutes

Ingredients:

Plant-based meat/ham, amount to taste
Mushrooms, amount to taste
Onions, amount to taste
1 pack tteokbokki
1 box Orasi vegan cream
4-5 pieces fermented tofu

Steps:

  1. Chop the mushrooms and onion.

  2. Boil water to cook the tteokbokki.

  3. Sauté onions until fragrant. Add the mushrooms and plant-based ham to fry. When almost cooked, add over half the box of vegan cream.

  4. Add the remaining cream to previously mashed fermented tofu. Mix well and add to wok to cook.

  5. Mix in the tteokbokki. Done! 😉

Contributor’s Note:

  • If not salty enough, you can add a bit of salt or an additional piece of fermented tofu

  • You can use regular cream if not vegan
