韓式秀牛拌飯 x 久違了的味道

2020年 | 這是我第一次做這道菜。拌飯十分易做,但這是我多年食素以來第一次再嚐韓式「牛肉」,所以很特別!

所需時間:45分鐘

材料:

Unlimeat 素牛肉 200g
紅蘿蔔 適量(切絲)
芽菜 適量
菠菜 適量
泡菜 適量
蛋 1 隻(可選)
韓式辣醬 2~3 湯匙
麻油 3 茶匙
龍舌蘭糖漿 2~3 茶匙
醬油 1 茶匙
蒜蓉 適量(可選)
芝麻 適量

*可根據個人口味調節蔬菜份量

步驟:

  1. 紅蘿蔔絲、芽菜、菠菜分別烚熟,瀝乾水。用芝麻、充足份量的麻油和少許鹽來醃芽菜和菠菜。

  2. 將秀牛解涷,用熱水飛一飛水。

  3. 用少許油炒秀牛。加入韓式辣醬、麻油、龍舌蘭糖漿、醬油和蒜蓉,再加少許水,炒至醬汁變稠。

  4. 將材料在飯面排好,打入雞蛋,灑上芝麻即成。

【備註】

  • 麻油、麻油、麻油!

  • 如沒有龍舌蘭糖漿可用糖或蜜糖

  • 可以用煎蛋,純素朋友不用蛋亦可

Korean Unlimeat Bibimbap x A Long-Lost Flavour

2020 | This was my first time making this. It’s a simple dish but special because it was my first time eating Korean ‘beef’ after all these years of being vegetarian!

Serves: 1

Total cooking time: 45 mins

Ingredients:

200g Unlimeat
Carrot, thinly sliced
Sprouts
Spinach
Kimchi
1 egg (optional)
2-3 tbsp gochujang
3 tsp sesame oil
2-3 tsp agave nectar
1 tsp soy sauce
Garlic (optional)
Sesame

*Vegetable portions can be adjusted according to taste

Steps:

  1. Poach and drain the carrot, sprouts, and spinach separately. Use sesame, a generous amount of sesame oil, and a bit of salt to marinate the sprouts and spinach.

  2. Thaw the Unlimeat and blanch briefly with hot water.

  3. Use a bit of oil to fry the Unlimeat. Add the gochujang, sesame oil, agave nectar, soy sauce, and garlic. Fry with water, until the sauce thickens.

  4. Arrange the ingredients nicely on the rice. Add the egg and sprinkle with sesame. Serve!

  • If you don’t have agave nectar, you can use sugar or honey 

  • Fried egg is good too, and vegan friends can do without
