土耳其扁豆湯 x 給城市的情書

這是能令我放鬆心情的食物,除了營養豐富、滿足口腹之慾,亦可慰籍心靈。

我最喜歡的城市是伊斯坦堡,而這扁豆湯就如一個溫暖的擁抱。雖然扁豆經常被視為普通、鄉村的食材,但它俱有豐富的蛋白質和纖維,與番茄和薯仔一起食用,更是別有風味。

份量:4

所需時間:40分鐘

材料:

橄欖油 2 湯匙
白洋蔥 1 個(中型,切塊 )
薯仔 2 個(中型,切塊)
紅扁豆1 杯
切碎或去皮番茄 1 罐 / 400克
水 2-3 杯
孜然 1 茶匙
胡椒粉和鹽(根據口味調節)
任何一款乾香草
紅辣椒片或辣椒粉(可選)

步驟:

  1. 在一個有蓋的中型鍋中燒熱橄欖油。

  2. 放入洋蔥和薯仔,在大火下炒3-4分鐘,邊煮邊攪拌,確保油能覆蓋食材。

  3. 放入紅扁豆,攪拌1分鐘。

  4. 加入番茄罐頭。

  5. 加水。扁豆容易吸水,如看似太粘稠,可多加點水。

  6. 放入香料和香草:孜然、胡椒粉、鹽和你喜歡的任何一款乾香草,拌勻。

  7. 大火煮滾後,調至中火,蓋上。

  8. 慢火煮25分鐘左右,煮熟即可。

  9. 煮熟後,放入攪拌機拌勻。如沒有攪拌機,可將食物搗碎成糊。

  10. 可加少許檸檬汁,趁熱享用。如有鮮香芹或薄荷,亦可隨意添加。

以上是合我個人口味的版本,你可以試試加入香草、香料或蒜頭,創造自己的食法!

Turkish Lentil Soup x To the City I Love

This is my comfort food, it’s wholesome and hearty and it fills the soul at the very least as much as the body.

Istanbul is my favourite city in the world, and the lentil soup feels like a warm hug. Although lentils are often considered unsophisticated, country-like food, they are a magnificent legume, packing lots of protein and fibre and mixing it with lovely flavours when enhanced with tomatoes and potatoes.

Serves: 4

Total cooking time: 40 minutes

Ingredients:

2 tbsp olive oil
1 medium white onion, chopped
2 medium potatoes, chopped
1 cup red lentils
1 can chopped or peeled tomatoes / tomato passata (400g)
2-3 cups water
1 tsp cumin
Ground pepper and salt according to taste
Any type of dried herb you can find
Red pepper flakes / chilli powder (optional)

Steps:

  1.  In a medium sized saucepan with a lid, heat up the olive oil.

  2. Once warm, add the chopped onions and potatoes and sauté for 3-4 minutes on high heat; stir to make sure the oil coats everything nicely.

  3. Add the lentils and stir for 1 minute.

  4. Add the can of tomatoes/tomato passata.

  5. Add the water. The lentils absorb quite a bit of water, and it's up to you how think or how watery you'd like the soup to be. Add more water if it looks too thick for you.

  6. Add the spices and the herbs: cumin, pepper, salt and any dry herbs you like. Mix it all in. 

  7. Let it come to boil while still on high heat. Once it starts boiling, turn the heat down to a medium, and cover with a lid. 

  8. Let it simmer for around 25 minutes, or until everything is fully cooked.

  9. Once cooked, blend it all using a blender. If you don't have that, you can mash it all together.

  10. Serve hot with a squeeze of lemon juice, and if you have any fresh parsley or mint, feel free to add that too.

This is my version of it, adapted to my tastes, but feel free to make it your own by experimenting with the herbs and spices or adding garlic!
