薯仔薄餅 x 寺院絮語

2020年 | 我曾為寺院的人弄過這道菜,他們都十分喜歡,認為加入芫茜與調味形成對比,味道特別豐富。烹飪之餘還可以跟人談天說地,實在令人愉快。

這段記憶對我特別深刻,因為那時候我初來報到,自薦為大家煮飯,讓我可以服務剛結識的人。

所需時間:25分鐘

材料:

薯仔(切粒)
蒜(切碎)
墨西哥辣椒
紅椒粉
百里香
洋蔥(切粒)
甜椒(切粒)
芫茜
墨西哥薄餅,又名玉米餅
橄欖油
黃糖
芝士(如非純素)

*可根據個人口味調節蔬菜份量
*墨西哥辣椒可從HKTVmall買到

步驟:

  1. 在平底鍋將油燒熱,放入薯仔。

  2. 讓薯仔慢慢煮熟,同時放入蒜、紅椒粉、墨西哥辣椒和百里香。

  3. 在另一個平底鍋下油,放入洋蔥,配少許黃糖。

  4. 兩個平底鍋用中至大火煮5-10分鐘。

  5. 將所有材料放在墨西哥薄餅上,最後灑上芝士(純素版可免)和芫茜。將薄餅對接或捲起。開飯啦!

Potato Fajitas x A Monastery Conversation

2020 | I made this dish for people at a monastery and they all loved it, saying the seasoning was very flavorful with the contrast of the cilantro. It was mostly nice to cook and prepare the meal with good conversation.

This memory stands out because I had volunteered to make dinner as a fairly new person to the centre, and it was a great way to be of service to people I was getting to know.

Serves: Other

Total cooking time: 25 minutes

Ingredients:

Potatoes, chopped
Garlic, chopped
Chipotle pepper
Paprika
Thyme
Onion, chopped
Sweet pepper, chopped
Cilantro
Tortilla
Olive oil
Brown sugar
Cheese (if non vegan)

*Vegetable portions can be adjusted according to taste
*Chipotle peppers can be purchased from HKTVmall

Steps:

  1. Simmer oil in pan and put in the potatoes.

  2. Let the potatoes cook a bit, then put in the garlic, paprika, chipotle pepper, thyme.

  3. Put onions in a pan with oil and let them simmer for a bit. Caramelise with some brown sugar. 

  4. Both frying pans should now cook on medium or high for 5-10 minutes.

  5. Add all the ingredients to the tortilla, sprinkle some cheese (can do without in vegan version), and finally some cilantro. Fold the tortilla in half or roll it up. Bon appetit!
